Zafrani Pulav

INGREDIENTS
1-1/2 Cup Rice
4-5 Green Cardamom
1/2 inch Cinnamon
1 TSP Saffron strands
1 Bay Leaf
1 large onion finely sliced
2 green chillies
1/2 cup Milk
1 TSP Cumin seeds
2 TBSP desi Ghee
20 gm Cashew
20 gm Almonds
20 gm Raisins
Salt to taste
DIRECTIONS

Step 1

Wash the rice thoroughly & soak for about 30-45 minutes.

Step 2

In a small bowl take lukewarm milk, add saffron strands, stir it well & keep it aside.

Step 3

Heat a pan , add 1 TBSP ghee.

Step 4

Add all dry fruits into the pan, roast for about 30-35 seconds & keep it aside.

Step 5

Heat another pan, add 1 TBSP ghee.

Step 6

Add cumin seeds and let it splutter.

Step 7

Add green cardamom, cinnamon, bay leaf into the pan & saute for a few seconds.

Step 8

Add soaked rice and gently stir for 2-3 minutes on high flame.

Step 9

Add 2-1/2 cup water into the pan and let the rice cook for 4-5 minutes until water is reduced.

Step 10

Now add roasted dry fruits, saffron milk & gently mix it with the rice.

Step 11

Add salt to taste.

Step 12

Let the rice cook for another 5-6 minutes until rice grains are tender and there is no water.

Step 13

Rice is ready to serve.
